  • 1 pound boneless chicken thighs
  • 2 tablespoons cooking oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon korma curry paste
  • 1 cup coconut milk
  • 2 tablespoons yogurt
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pan, heat the oil over medium heat.
  2. Add the onions and sauté until golden brown.
  3. Stir in the garlic and ginger, cooking for an additional minute.
  4. Add the chicken and cook until browned.
  5. Mix in the korma curry paste and cook for 2 minutes.
  6. Pour in the coconut milk and bring to a simmer.
  7. Reduce heat, cover, and cook for 20 minutes, stirring occasionally.
  8. Stir in the yogurt, salt, and pepper, and cook for another 5 minutes.
  9. Garnish with cilantro before serving.
