Creamy Butternut Squash Gnocchi with Sausage

  • 16 ounces gnocchi
  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then roast in the oven for 25-30 minutes until tender.
  3. Cook the gnocchi according to package instructions and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the sausage and cook until browned.
  5. Add the minced garlic and sauté for 1 minute.
  6. Stir in the roasted butternut squash, heavy cream, Parmesan cheese, salt, pepper, and nutmeg. Cook until heated through and combined.
  7. Fold in the cooked gnocchi and cook for an additional 2-3 minutes.
  8. Garnish with fresh parsley before serving.

Notes

  • For a vegetarian version, omit the sausage and use a plant-based substitute.
  • Feel free to add spinach or kale for extra greens.
