- 1 ½ cups all-purpose flour
- 1 cup fresh cranberries
- ½ cup sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- 1 teaspoon orange zest
- ½ cup orange juice
- ½ cup milk
- 1/3 cup vegetable oil
- 1 large egg
- Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
- In a large bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, combine orange zest, orange juice, milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just mixed.
- Add cranberries and fold gently.
- Fill muffin cups about 2/3 full and bake for 20-25 minutes.
- Allow to cool before serving.
Notes
- For a sweeter muffin, you can add more sugar.
- These muffins are best served fresh but can be frozen for up to 3 months.
