Cranberry Orange Muffins

Deliciously fresh cranberry orange muffins that are easy to make, perfect for breakfast or a snack.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup fresh cranberries
  • ½ cup sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon orange zest
  • ½ cup orange juice
  • ½ cup milk
  • 1/3 cup vegetable oil
  • 1 large egg

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, combine orange zest, orange juice, milk, vegetable oil, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just mixed.
  5. Add cranberries and fold gently.
  6. Fill muffin cups about 2/3 full and bake for 20-25 minutes.
  7. Allow to cool before serving.

Notes

  • For a sweeter muffin, you can add more sugar.
  • These muffins are best served fresh but can be frozen for up to 3 months.
