These Coffee Cake Muffins are the perfect blend of a classic coffee cake and a muffin, making them great for breakfast or a snack!

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sour cream
  • ½ cup brown sugar, packed
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the flour mixture to the creamed mixture, alternating with the sour cream, until everything is well combined.
  6. In a small bowl, mix together the brown sugar and cinnamon for the topping.
  7. Spoon half of the muffin batter into the prepared tin, sprinkle with half of the cinnamon sugar, then top with the remaining batter and then the rest of the topping.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Let them cool in the pan for a few minutes before transferring to a wire rack.

Notes

  • For an extra touch, add a crumb topping made of flour, butter, and sugar.
  • These muffins can be enjoyed warm or at room temperature.
