Coconut Rum (Coquito) Tiramisu

A luscious twist on traditional tiramisu, featuring the tropical flavors of coconut rum and coquito.

Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup coconut rum
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 4 egg yolks
  • 2 cups ladyfinger cookies
  • 1/4 cup cocoa powder
  • 1/4 cup shredded coconut

Instructions

  1. In a bowl, whisk together the coconut milk, heavy cream, coconut rum, sugar, and vanilla.
  2. In another bowl, beat the egg yolks until pale and thick.
  3. Gradually add the coconut mixture to the egg yolks, mixing well.
  4. Dip ladyfinger cookies in the mixture and layer in a dish.
  5. Spread half of the coconut mixture over the ladyfingers.
  6. Repeat the layers, finishing with the coconut mixture.
  7. Sprinkle cocoa powder and shredded coconut on top.
  8. Refrigerate for at least 4 hours before serving.

Notes

  • For a non-alcoholic version, omit the coconut rum.
  • Can be prepared a day in advance for best flavor.
