Classic Creamy Lobster Bisque

A rich and velvety lobster bisque that brings comfort in every spoonful.

Ingredients

  • 2 lobsters, cooked and shells removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until soft.
  3. Stir in garlic and cook for an additional minute.
  4. Pour in the white wine and let it reduce by half.
  5. Add the seafood stock and bring to a boil.
  6. Reduce heat and let simmer for about 30 minutes.
  7. Using an immersion blender, blend the soup until smooth.
  8. Stir in the heavy cream, paprika, salt, and pepper.
  9. Add in the lobster meat and heat through.
  10. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, you can roast the lobster shells before adding them to the soup.
  • Pair with crusty bread for a complete meal.
