- 1 bunch kale
- 1 cup pomegranate seeds
- 1/2 cup sliced almonds
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Wash and chop the kale into bite-sized pieces.
- In a large bowl, combine the kale, pomegranate seeds, sliced almonds, feta cheese, and red onion.
- In a separate bowl, whisk together the olive oil, honey, lemon juice, and Dijon mustard.
- Pour the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for 30 minutes.
