Citrus Pomegranate Kale Salad with Honey-Lemon Vinaigrette

A refreshing and healthy salad featuring kale, pomegranate, and a honey-lemon vinaigrette.

Ingredients

Scale
  • 1 bunch kale
  • 1 cup pomegranate seeds
  • 1/2 cup sliced almonds
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and chop the kale into bite-sized pieces.
  2. In a large bowl, combine the kale, pomegranate seeds, sliced almonds, feta cheese, and red onion.
  3. In a separate bowl, whisk together the olive oil, honey, lemon juice, and Dijon mustard.
  4. Pour the dressing over the salad and toss to combine.
  5. Season with salt and pepper to taste.
  6. Serve immediately or chill in the refrigerator for 30 minutes.

Notes

  • This salad can be made ahead of time; however, it’s best to add the dressing just before serving.
  • Feel free to add other toppings like grilled chicken or avocado for added protein.
