Cinnamon Banana Protein Muffins with Sourdough

These Cinnamon Banana Protein Muffins with Sourdough are a delicious way to enjoy a nutritious snack. Perfect for breakfast or a quick pick-me-up!

  • 1 cup ripe bananas, mashed
  • 1 cup sourdough starter
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas with the sourdough starter.
  3. Stir in the rolled oats, protein powder, honey or maple syrup, cinnamon, baking soda, and salt until well incorporated.
  4. Fold in the chopped walnuts.
  5. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

  • For added sweetness, feel free to top the muffins with a sprinkle of cinnamon-sugar.
  • These muffins can also be customized with chocolate chips or dried fruit.
