  • 1 cup unsalted butter, melted
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups cream cheese, softened
  • 1 1/2 cups sour cream
  • 1 tablespoon cocoa powder
  • 1 cup all-purpose flour
  • 1 ounce red food coloring

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix crushed chocolate cookies and melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat together cream cheese and sugar until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in vanilla, sour cream, cocoa powder, flour, and red food coloring until well blended.
  7. Pour the cheesecake mixture over the crust in the springform pan.
  8. Bake for 1 hour or until the center is set.
  9. Let it cool completely before refrigerating for at least 4 hours.
  10. Serve chilled.
