  • 1 cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 cups fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together sugar and butter until fluffy.
  4. Add eggs one at a time, then stir in vanilla.
  5. Gradually add dry ingredients to the wet mixture.
  6. Pour the batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let cool completely.
  9. In another bowl, whip heavy cream until stiff peaks form.
  10. Gently fold in raspberries.
  11. Spread the mousse on top of the cooled cake.
  12. Chill for at least 2 hours before serving.

  • For extra chocolate flavor, add chocolate shavings on top.
