  • 1/2 cup brewed coffee
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a large mixing bowl, combine all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add coffee, oil, eggs, and vanilla to the dry ingredients and mix until well combined.
  4. Pour the batter into prepared cupcake liners, filling each about 2/3 full.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Let cupcakes cool completely.
  7. In a separate bowl, whip heavy cream until soft peaks form, then add powdered sugar and whip until stiff peaks form.
