Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together pumpkin puree, sugars, and butter until smooth.
  3. Beat in the eggs one at a time.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a small bowl, mix together sugar and cinnamon for rolling.
  7. Shape the dough into balls and roll them in the cinnamon sugar mixture.
  8. Place on a baking sheet lined with parchment paper, leaving space between each cookie.
