  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large bowl, combine the shredded chicken, cheese, black beans, corn, salsa, salt, and pepper.
  2. Lay out the tortillas on a flat surface. Divide the filling evenly among the tortillas.
  3. Roll the tortillas tightly, folding in the sides as you go to form burritos.
  4. Heat olive oil in a skillet over medium heat. Place the burritos seam-side down in the skillet.
  5. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  6. Remove from skillet, slice in half, and serve warm.
