- 2 cups diced potatoes
- 1 pound smoked sausage
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning
- 1/2 cup sour cream
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- Preheat oven to 400°F (200°C).
- In a large bowl, combine potatoes, olive oil, ranch seasoning, salt, and pepper. Mix well.
- Spread the potato mixture on a baking sheet and bake for 25 minutes.
- While the potatoes are baking, slice the smoked sausage.
- After 25 minutes, add the sausage to the baking sheet and bake for an additional 15 minutes.
- Remove from the oven and stir in the sour cream and shredded cheddar cheese. Return to the oven for another 5 minutes until the cheese is melted.
- Serve warm and enjoy!
