  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 4 large tortillas
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 1/2 cup sour cream (for serving)

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add ground chicken and cook until browned.
  3. Stir in cooked rice, taco seasoning, and salsa; cook for another 5 minutes.
  4. Place a portion of the mixture in each tortilla and sprinkle with shredded cheese.
  5. Roll the tortillas tightly and place in a baking dish.
  6. Bake in a preheated oven at 350°F for 15 minutes.
  7. Serve hot with sour cream.
