  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup bell peppers, chopped
  • 1 cup asparagus, trimmed and cut
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the zucchini, bell peppers, and asparagus. Sauté for about 5 minutes.
  4. Stir in the cherry tomatoes and cook for an additional 2 minutes.
  5. Add the cooked tortellini, garlic powder, salt, and pepper. Toss to combine and heat through.
