  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1 cup walnuts, chopped
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the grated carrots, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the crushed pineapple and walnuts.
  7. Pour the batter into a greased 9-inch springform pan and bake for about 30-35 minutes or until a toothpick comes out clean.
  8. Let the cake cool completely.
  9. In a separate bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, mixing until well combined.
  10. Once the cake has cooled, spread the cream cheese mixture over the top of the cake.
