  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large mixing bowl, combine grated carrots, flour, and sugars.
  3. Add baking soda, cinnamon, and salt, mixing well.
  4. In another bowl, whisk together oil, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix just until combined. Fold in walnuts if using.
  6. Spread the batter into the prepared pan and smooth out the top.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
