  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup crushed candy canes
  • 1/4 cup red food coloring

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the egg and both extracts; mix until combined.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until well blended.
  6. Divide the dough in half. Add crushed candy canes to one half and red food coloring to the other half.
  7. Roll each dough between parchment paper to about 1/4 inch thickness.
  8. Layer the two doughs on top of each other and roll them into a log.
  9. Chill the log in the refrigerator for at least 30 minutes.
  10. Slice the log into rounds and place them on a baking sheet.
  11. Bake for 10-12 minutes or until edges are lightly golden.
  12. Let cool before serving.

Notes

  • For added decoration, drizzle melted chocolate over the cooled cookies.
  • Store in an airtight container for up to a week.
