  • 1 cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tsp peppermint extract
  • 2 ¾ cups all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ½ cup crushed candy canes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Add egg and peppermint extract, mixing well.
  4. In another bowl, combine flour, salt, and baking powder; gradually add to the creamed mixture.
  5. Stir in crushed candy canes.
  6. Drop by rounded tablespoon onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

  • For a more intense peppermint flavor, add more peppermint extract.
  • These cookies can be decorated with icing for a festive touch.
