- 6 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 green onion, finely chopped
- 1/2 teaspoon Cajun seasoning
- 4 slices turkey bacon, cooked and crumbled
- 1 cup breadcrumbs
- 1 cup vegetable oil, for frying
- Hard boil the eggs, let them cool, and peel.
- Cut the eggs in half and remove the yolks.
- In a bowl, mix egg yolks, mayonnaise, Dijon mustard, green onion, Cajun seasoning, and turkey bacon until well combined.
- Fill the egg whites with the yolk mixture.
- Coat each filled egg white in breadcrumbs.
