  • 1 pound Cajun chicken, cooked and sliced
  • 2 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and bell pepper; sauté until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Add orzo and chicken broth; bring to a boil.
  5. Reduce heat and simmer for about 10 minutes, or until orzo is tender.
  6. Stir in heavy cream, Parmesan cheese, Cajun seasoning, salt, and pepper.
  7. Return chicken to the pot, stir to combine, and cook for an additional 5 minutes.
  8. Serve hot, garnished with extra Parmesan if desired.

Notes

  • For spicier flavor, increase the amount of Cajun seasoning.
