Buffalo Chicken Stuffed Peppers

These Buffalo Chicken Stuffed Peppers are a perfect weeknight meal, combining the bold flavors of buffalo chicken with the nutritious benefits of bell peppers.

  • 4 bell peppers
  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a bowl, mix shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and sprinkle the remaining cheddar cheese on top.
  6. Bake for 25-30 minutes or until the peppers are tender and the cheese is bubbly.
