Buffalo Chicken Chili: Spicy Comfort Food For Game Day

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1/2 cup buffalo wing sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  2. Add the chicken breasts, and cook until browned on both sides.
  3. Stir in the black beans, kidney beans, crushed tomatoes, chicken broth, buffalo wing sauce, chili powder, cumin, smoked paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  5. Shred the chicken in the pot using two forks, and mix well.
  6. Serve hot with your favorite toppings.

Notes

  • This chili can be topped with shredded cheese, green onions, or sour cream.
  • Adjust the spiciness by adding more or less buffalo wing sauce.
