  • 2 chicken breasts
  • 1 cup diced tomatoes
  • 1/4 cup basil, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 4 slices turkey bacon
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook turkey bacon in a skillet until crispy, then chop.
  3. In a bowl, mix tomatoes, basil, olive oil, and balsamic vinegar.
  4. Season chicken breasts and place in a baking dish.
  5. Top each chicken breast with the tomato mixture and mozzarella cheese.
  6. Bake for 25-30 minutes, or until the chicken is cooked through.
  7. In the last 5 minutes, add the chopped turkey bacon on top.
  8. Let rest for a few minutes before serving.
