Broccoli Pasta Salad

Ingredients

  • 2 cups broccoli florets
  • 8 ounces pasta shells
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine broccoli, tomatoes, cucumber, red onion, olives, and feta cheese.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
