  • 2 large sweet potatoes
  • 4 slices turkey bacon
  • 2 slices chicken ham
  • 1 cup spinach
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork; bake for about 45 minutes.
  3. In a skillet, cook turkey bacon until crispy; remove and chop.
  4. In the same skillet, add chicken ham and spinach; sauté until spinach wilts.
  5. Cook eggs in the skillet; season with salt and pepper.
  6. Slice baked sweet potatoes and stuff with bacon, ham, spinach, and eggs.
