Ingredients

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 cup spinach
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion
  • 2 eggs
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Dice sweet potatoes and toss with olive oil, salt, and pepper. Bake for 25 minutes.
  3. Cook turkey bacon until crispy.
  4. In a skillet, sauté red onion until translucent, then add spinach and cherry tomatoes.
  5. Fry eggs to your liking.
