Blueberry Breakfast Quesadilla

  • 2 flour tortillas
  • 1/2 cup cream cheese, softened
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1/4 cup shredded cheese (cheddar or mozzarella)

Instructions

  1. In a bowl, mix the cream cheese, honey, and cinnamon until smooth.
  2. Spread the cream cheese mixture evenly on one side of each tortilla.
  3. Top one tortilla with fresh blueberries and shredded cheese.
  4. Place the second tortilla on top, cream cheese side down.
  5. Heat a skillet over medium heat and cook the quesadilla for 2-3 minutes on each side until golden brown and the cheese is melted.
