  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • ¼ cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • ¼ cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half and place them on a baking sheet.
  3. Drizzle olive oil over the potatoes, sprinkle with garlic powder, salt, and black pepper. Toss to coat.
  4. Bake potatoes for 25-30 minutes until golden brown and crispy.
  5. While potatoes are roasting, cook turkey bacon in a skillet until crispy. Chop into pieces.
  6. In a large bowl, mix together Dijon mustard, apple cider vinegar, and a bit of salt and pepper.
  7. Add the roasted potatoes, chicken ham, and turkey bacon to the bowl. Toss gently to combine.
  8. Garnish with chopped green onions before serving.

  • For best flavor, let the salad sit for 15 minutes before serving.
  • This salad can be served warm or chilled.
