Best Roasted Potato Salad

A delicious twist on classic potato salad featuring roasted potatoes and turkey bacon.

  • 2 pounds baby potatoes
  • 6 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup green onions, sliced
  • 1/4 cup parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in halves or quarters.
  3. Toss the potatoes with oil, salt, and pepper, then spread them on a baking sheet.
  4. Roast the potatoes for 25-30 minutes until golden and tender.
  5. Meanwhile, cook the turkey bacon until crispy, then chop it into pieces.
  6. In a large bowl, mix the mayonnaise, Dijon mustard, apple cider vinegar, sliced green onions, and parsley.
  7. Add the roasted potatoes and turkey bacon to the bowl and stir gently.
  8. Adjust seasoning with salt and pepper, if needed.
  9. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, consider adding chopped hard-boiled eggs.
  • This salad can be served warm or cold.
