  • 2 pounds baby potatoes
  • 6 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a large bowl, combine the olive oil, apple cider vinegar, garlic powder, salt, and pepper.
  4. Add the potatoes to the bowl and toss to coat.
  5. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden brown.
  6. While the potatoes are roasting, cook the turkey bacon until crispy and chop.
  7. Once the potatoes are done, let them cool slightly before adding the turkey bacon and parsley.
  8. Toss everything together and serve warm or at room temperature.
