  • 1 large egg
  • 1/4 cup granulated sugar for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Add molasses and egg to the butter mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll dough into balls and then roll in granulated sugar.
  7. Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are firm and the tops are crackled.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
