- 2 pounds beef short ribs
- 1 tablespoon olive oil
- 1 onion finely chopped
- 2 carrots diced
- 2 celery stalks diced
- 4 cloves garlic minced
- 1 cup red wine
- 1 can (28 ounces) crushed tomatoes
- 2 cups beef broth
- 2 sprigs fresh thyme
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Parmesan cheese for serving
- In a large pot, heat the olive oil over medium heat.
- Add the beef short ribs and brown on all sides. Remove from the pot and set aside.
- Add the onion, carrots, celery, and garlic to the pot. Cook until softened.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot.
- Add the crushed tomatoes, beef broth, thyme, Worcestershire sauce, and the browned short ribs back into the pot.
- Bring to a simmer, cover, and cook for 2-3 hours until the meat is tender.
- Remove the short ribs, shred the meat, and return it to the sauce. Season with salt and pepper.
- Serve over pasta or polenta, topped with Parmesan cheese.
