Best Ever Beef Short Rib Ragu

A rich and hearty beef short rib ragu that is perfect for cozy dinners.

Ingredients

  • 2 pounds beef short ribs
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1 cup red wine
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef short ribs and brown on all sides. Remove from the pot and set aside.
  3. Add the onion, carrots, celery, and garlic to the pot. Cook until softened.
  4. Pour in the red wine, scraping up any browned bits from the bottom of the pot.
  5. Add the crushed tomatoes, beef broth, thyme, Worcestershire sauce, and the browned short ribs back into the pot.
  6. Bring to a simmer, cover, and cook for 2-3 hours until the meat is tender.
  7. Remove the short ribs, shred the meat, and return it to the sauce. Season with salt and pepper.
  8. Serve over pasta or polenta, topped with Parmesan cheese.

Notes

  • This ragu tastes even better the next day.
  • Feel free to add more vegetables like mushrooms.
