A delicious recipe for beef and cheese chimichangas that are perfectly crispy.

  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 8 large flour tortillas
  • 2 cups vegetable oil (for frying)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned.
  2. Drain excess fat and stir in garlic powder, onion powder, cumin, and chili powder. Cook for an additional 2 minutes.
  3. Remove from heat and let the mixture cool slightly, then stir in the shredded cheddar cheese.
  4. To assemble, place a generous amount of the beef mixture on each tortilla, fold in the sides, and roll tightly.
  5. Heat oil in a deep pan over medium-high heat. Fry the chimichangas until golden and crispy, about 3-4 minutes on each side.
  6. Drain on paper towels and serve hot.

Notes

  • Serve with salsa, guacamole, or sour cream.
  • For extra crispiness, double fry the chimichangas.
