Baked Sweet Potato Zucchini Tots

Delicious baked sweet potato zucchini tots that are easy to make, healthy, and irresistibly tasty!

Ingredients

  • 2 cups grated zucchini
  • 2 cups mashed sweet potatoes
  • 1/2 cup flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine grated zucchini and mashed sweet potatoes.
  3. Add flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper; mix until well combined.
  4. Scoop the mixture and form tots, then place them on the prepared baking sheet.
  5. Bake for 20-25 minutes or until golden brown and crispy.

Notes

  • For a gluten-free version, substitute flour with almond flour.
  • Serve with a dipping sauce of your choice.
