Baked Sweet Potato Zucchini Tots

A delicious and healthy alternative to traditional tots, these Baked Sweet Potato Zucchini Tots are easy to make and perfect for a snack.

Ingredients

  • 2 medium sweet potatoes
  • 1 medium zucchini
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce sweet potatoes with a fork and bake for 45-50 minutes until tender.
  3. Grate zucchini and squeeze out excess moisture.
  4. In a bowl, mix sweet potato flesh, zucchini, breadcrumbs, Parmesan, egg, and spices.
  5. Form mixture into small tots and place on a baking sheet.
  6. Bake for 20-25 minutes until golden brown.
