  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup diced apples
  • 1 batch cinnamon vanilla frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Add in the softened butter, egg, and vanilla extract. Mix until combined.
  4. Fold in the diced apples.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for about 18-20 minutes or until a toothpick comes out clean.
  7. Let them cool before frosting.
  8. Prepare the cinnamon vanilla frosting and pipe it onto the cooled cupcakes.

Notes

  • Make sure the cupcakes are completely cool before frosting to prevent melting.
  • For best flavor, use fresh, tart apples.
