Apple Cider Whoopie Pie Cookies with Caramel

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another large bowl, cream together butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in apple cider and vanilla.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, or until lightly golden. Allow cooling.
  8. Once cooled, sandwich caramel sauce between two cookies to form whoopie pies.

Notes

  • For added flavor, sprinkle a bit of sea salt on the caramel before closing the whoopie pies.
