  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the cod fillets with salt and pepper, then add to the skillet.
  3. Cook for 5-6 minutes on each side until the fish is golden brown and flakes easily with a fork.
  4. Remove the cod from the skillet and set aside.
  5. In the same skillet, add garlic and cherry tomatoes, sauté for 2-3 minutes.
  6. Pour in white wine and bring to a simmer.
  7. Add the fresh basil to the sauce and stir well.
  8. Return the cod to the skillet, spoon sauce over the top, and cook for an additional 2 minutes.
