- 4 pieces chicken legs
- 1 bottle red wine
- 2 cups chicken broth
- 4 ounces bacon, diced
- 1 cup pearl onions
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 2 tablespoons all-purpose flour
- 3 tablespoons unsalted butter
- Salt and pepper to taste
- In a large Dutch oven, cook the bacon over medium heat until crispy. Remove bacon and set aside.
- In the same pot, brown the chicken on all sides, then remove and set aside.
- Add onions and garlic to the pot, sautéing until fragrant.
- Stir in the tomato paste and flour, cooking for 1-2 minutes.
- Return the chicken and bacon to the pot, pour in the wine and chicken broth.
- Add thyme, salt, and pepper; bring to a simmer.
- Cover and cook for 1 hour, until chicken is tender.
- Serve hot with crusty bread or over mashed potatoes.
Notes
- For a thicker sauce, remove the chicken once cooked and reduce the sauce further over high heat.
- This dish tastes even better the next day, making it perfect for meal prep!
