  • 2 fillets white fish (such as cod or tilapia)
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/4 cup flour
  • 1 mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the fish by seasoning with salt and pepper.
  3. Dredge each fillet in flour, then dip in beaten eggs, and finally coat with a mixture of shredded coconut and breadcrumbs.
  4. Place the coated fillets on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until golden brown.
  6. While the fish bakes, prepare the mango salsa by combining mango, red onion, jalapeño, cilantro, and lime juice in a bowl.
  7. Serve the fish topped with mango salsa.
