  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brewed espresso, cooled
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the espresso, oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. In a medium bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  8. Once the cake is cooled, spread the whipped cream on top and dust with cocoa powder.

Notes

  • For added flavor, consider adding a sprinkle of ground cinnamon on top before serving.
  • This cake pairs wonderfully with a cup of coffee.
